Ingredients:
- 2 medium zucchinis, grated (about 500 grams)
- 1 teaspoon salt (5 grams)
- 1 cup all-purpose flour (120 grams)
- 2 large eggs
- 1/2 cup grated Parmesan cheese (50 grams)
- 2 tablespoons fresh parsley, chopped
- 1 clove garlic, minced
- 1/2 teaspoon black pepper (2 grams)
- 1/2 teaspoon paprika (2 grams)
- 1/2 teaspoon baking powder (2 grams)
- Vegetable oil (for frying, about 1/2 cup)
Instructions:
- Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
- Squeeze excess water from zucchini using a clean kitchen towel. Combine zucchini with flour, eggs, Parmesan, parsley, garlic, pepper, paprika, and baking powder in a large bowl.
- Heat a skillet over medium heat and add vegetable oil.
- Scoop spoonfuls of the mixture and shape into patties. Carefully place into the hot skillet; do not overcrowd. Fry until golden brown, about 4-5 minutes per side.
- Remove fritters with a slotted spatula and drain on paper towels.
- Enjoy immediately with a yogurt dip or tzatziki!
