Ingredients:

  • 2 medium zucchinis, grated (about 500 grams)
  • 1 teaspoon salt (5 grams)
  • 1 cup all-purpose flour (120 grams)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (50 grams)
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper (2 grams)
  • 1/2 teaspoon paprika (2 grams)
  • 1/2 teaspoon baking powder (2 grams)
  • Vegetable oil (for frying, about 1/2 cup)

Instructions:

  1. Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Squeeze excess water from zucchini using a clean kitchen towel. Combine zucchini with flour, eggs, Parmesan, parsley, garlic, pepper, paprika, and baking powder in a large bowl.
  3. Heat a skillet over medium heat and add vegetable oil.
  4. Scoop spoonfuls of the mixture and shape into patties. Carefully place into the hot skillet; do not overcrowd. Fry until golden brown, about 4-5 minutes per side.
  5. Remove fritters with a slotted spatula and drain on paper towels.
  6. Enjoy immediately with a yogurt dip or tzatziki!
