Ingredients:
- 2.5 lbs Yukon Gold potatoes, peeled and cubed
- 1 cup chicken broth (low sodium)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, cut into pieces
- 1/2 cup heavy cream
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Optional: chopped chives, crumbled bacon, shredded cheddar cheese
Instructions:
- Peel and cube the potatoes into roughly 1-inch pieces.
- Place the cubed potatoes, chicken broth, cream cheese, butter, garlic powder, and onion powder in the crockpot.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, or until the potatoes are fork-tender.
- Once the potatoes are cooked, mash them using a potato masher or an electric hand mixer until desired consistency is reached.
- Stir in the heavy cream until smooth and creamy.
- Season with salt and pepper to taste. Adjust seasonings as needed.
- Garnish with chopped chives, crumbled bacon, or shredded cheddar cheese, if desired. Serve hot. Enjoy your Crockpot Mashed Potatoes!
