Ingredients:

  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 1 cup chicken broth (low sodium)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped chives, crumbled bacon, shredded cheddar cheese

Instructions:

  1. Peel and cube the potatoes into roughly 1-inch pieces.
  2. Place the cubed potatoes, chicken broth, cream cheese, butter, garlic powder, and onion powder in the crockpot.
  3. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, or until the potatoes are fork-tender.
  4. Once the potatoes are cooked, mash them using a potato masher or an electric hand mixer until desired consistency is reached.
  5. Stir in the heavy cream until smooth and creamy.
  6. Season with salt and pepper to taste. Adjust seasonings as needed.
  7. Garnish with chopped chives, crumbled bacon, or shredded cheddar cheese, if desired. Serve hot. Enjoy your Crockpot Mashed Potatoes!
