Ingredients:
- 3 lbs Boneless, Skinless Chicken Thighs or Breasts
- 1/2 cup Low-Sodium Soy Sauce
- 1/2 cup Honey
- 1/4 cup Apple Cider Vinegar
- 6 cloves Garlic, minced
- 1 tablespoon Fresh Ginger, grated
- 1 teaspoon Sriracha or Red Pepper Flakes (adjust to taste)
- 3 tablespoons Cornstarch
- 3 tablespoons Cold Water
- 12 oz Egg Noodles (or dried spaghetti/linguine)
- 1 teaspoon Sesame Oil
- 4 Green Onions, thinly sliced (for garnish)
- 1 teaspoon Toasted Sesame Seeds (for garnish)
Instructions:
- Prepare the Sauce Base: In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and Sriracha/chilli flakes until thoroughly combined.
- Load the Slow Cooker: Place the chicken pieces directly into the bottom of the slow cooker insert. Pour approximately three-quarters (¾) of the prepared sauce evenly over the chicken. Reserve the remaining sauce mixture.
- Slow Cook: Cover the cooker and cook on Low for 7-8 hours or High for 4-5 hours, until the chicken is fork-tender.
- Shred or Slice Chicken: Remove the cooked chicken from the slow cooker and place it on a cutting board. Shred it using two forks, or slice it thickly, depending on preference.
- Thicken the Sauce: In the small bowl used for the sauce, whisk together the reserved sauce mixture with the 3 tablespoons of cornstarch and 3 tablespoons of cold water until a smooth slurry forms. Pour this slurry into the slow cooker insert containing the cooking liquid. Stir well.
- Final Glaze: Return the shredded/sliced chicken to the slow cooker and toss everything together until the sauce has thickened into a beautiful, glossy glaze. This should take about 15–20 minutes on High setting with stirring.
- Cook Noodles: While the sauce is thickening, boil your noodles according to package directions until al dente. Drain immediately and toss lightly with sesame oil to prevent sticking.
- Serve: Divide the saucy Crockpot Honey Garlic Chicken mixture over mounds of the prepared noodles. Garnish generously with sliced green onions and toasted sesame seeds.
