Ingredients:

  • 3 lbs Boneless, Skinless Chicken Thighs or Breasts
  • 1/2 cup Low-Sodium Soy Sauce
  • 1/2 cup Honey
  • 1/4 cup Apple Cider Vinegar
  • 6 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 1 teaspoon Sriracha or Red Pepper Flakes (adjust to taste)
  • 3 tablespoons Cornstarch
  • 3 tablespoons Cold Water
  • 12 oz Egg Noodles (or dried spaghetti/linguine)
  • 1 teaspoon Sesame Oil
  • 4 Green Onions, thinly sliced (for garnish)
  • 1 teaspoon Toasted Sesame Seeds (for garnish)

Instructions:

  1. Prepare the Sauce Base: In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and Sriracha/chilli flakes until thoroughly combined.
  2. Load the Slow Cooker: Place the chicken pieces directly into the bottom of the slow cooker insert. Pour approximately three-quarters (¾) of the prepared sauce evenly over the chicken. Reserve the remaining sauce mixture.
  3. Slow Cook: Cover the cooker and cook on Low for 7-8 hours or High for 4-5 hours, until the chicken is fork-tender.
  4. Shred or Slice Chicken: Remove the cooked chicken from the slow cooker and place it on a cutting board. Shred it using two forks, or slice it thickly, depending on preference.
  5. Thicken the Sauce: In the small bowl used for the sauce, whisk together the reserved sauce mixture with the 3 tablespoons of cornstarch and 3 tablespoons of cold water until a smooth slurry forms. Pour this slurry into the slow cooker insert containing the cooking liquid. Stir well.
  6. Final Glaze: Return the shredded/sliced chicken to the slow cooker and toss everything together until the sauce has thickened into a beautiful, glossy glaze. This should take about 15–20 minutes on High setting with stirring.
  7. Cook Noodles: While the sauce is thickening, boil your noodles according to package directions until al dente. Drain immediately and toss lightly with sesame oil to prevent sticking.
  8. Serve: Divide the saucy Crockpot Honey Garlic Chicken mixture over mounds of the prepared noodles. Garnish generously with sliced green onions and toasted sesame seeds.
