  • 1 cup tapioca flour

  • 3 large eggs
  • 1/4 cup olive oil or melted coconut oil
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts or seeds (optional)
  • 1 tablespoon dried herbs (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the loaf pan or line it with parchment paper.
  3. In a large mixing bowl, combine almond meal, tapioca flour, baking powder, and salt.
  4. In another bowl, whisk together eggs, olive oil, maple syrup, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in any optional add-ins (nuts or herbs) if using.
  7. Transfer the batter to the prepared loaf pan, smoothing the top.
  8. Bake in the preheated oven for 35-40 minutes or until golden brown and a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
