Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the loaf pan or line it with parchment paper.
- In a large mixing bowl, combine almond meal, tapioca flour, baking powder, and salt.
- In another bowl, whisk together eggs, olive oil, maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in any optional add-ins (nuts or herbs) if using.
- Transfer the batter to the prepared loaf pan, smoothing the top.
- Bake in the preheated oven for 35-40 minutes or until golden brown and a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
