Ingredients:
- 6 large eggs (approx. 300g)
- 1 cup milk (240ml) or plant-based alternative
- 1 cup shredded cheese (e.g., cheddar or feta) (115g)
- 1 cup chopped spinach (30g)
- 1 cup diced bell peppers (150g)
- 1 small onion, finely chopped (100g)
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet, heat a little oil and sauté the chopped onion and minced garlic until soft, about 3-5 minutes.
- Add the diced bell peppers and spinach; cook until softened. Remove from heat and let cool slightly.
- In a large bowl, whisk together the eggs, milk, oregano, salt, and pepper until well combined.
- Stir in the sautéed vegetables and shredded cheese.
- Transfer the filling into the greased pie dish, spreading it evenly.
- Place in the oven and bake for 35-40 minutes, or until the quiche is set and lightly golden, checking with a toothpick if it comes out clean.
- Allow to cool slightly before slicing. Serve warm or at room temperature.
