Ingredients:

  • 6 large eggs (approx. 300g)
  • 1 cup milk (240ml) or plant-based alternative
  • 1 cup shredded cheese (e.g., cheddar or feta) (115g)
  • 1 cup chopped spinach (30g)
  • 1 cup diced bell peppers (150g)
  • 1 small onion, finely chopped (100g)
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat a little oil and sauté the chopped onion and minced garlic until soft, about 3-5 minutes.
  3. Add the diced bell peppers and spinach; cook until softened. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together the eggs, milk, oregano, salt, and pepper until well combined.
  5. Stir in the sautéed vegetables and shredded cheese.
  6. Transfer the filling into the greased pie dish, spreading it evenly.
  7. Place in the oven and bake for 35-40 minutes, or until the quiche is set and lightly golden, checking with a toothpick if it comes out clean.
  8. Allow to cool slightly before slicing. Serve warm or at room temperature.
