Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 cup chopped onion (150g)
- 1 cup chopped cooked bacon or ham (150g)
- 1 cup shredded cheddar cheese (100g)
- 6 large eggs (approx. 360g)
- 1 1/2 cups milk (360 ml)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
- Pinch of nutmeg (optional, for a touch of class!) (0.5g)
- 1/4 cup chopped fresh parsley (loosely packed) (15g)
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease the pie plate.
- Heat olive oil in a sauté pan over medium heat. Add onion and cook until softened and translucent.
- In a large bowl, whisk together eggs, milk, salt, pepper, and nutmeg (if using).
- Add the cooked onion, bacon/ham, and cheese to the egg mixture. Stir to combine.
- Pour the mixture into the prepared pie plate.
- Bake for 40-45 minutes, or until the quiche is set and lightly golden brown on top. A knife inserted near the centre should come out clean.
- Let cool slightly before slicing and serving. Garnish with fresh parsley (if desired).
