Ingredients:

  • 2 English cucumbers (approx. 1.5 lbs / 680g)
  • 1/2 tsp fine sea salt
  • 8 oz cream cheese, softened
  • 2 tbsp sour cream
  • 1 tbsp fresh lemon juice
  • 1 tsp dried dill
  • 1/4 tsp garlic powder
  • 1 cup cherry tomatoes, quartered
  • 2 tbsp fresh chives, snipped
  • 1 tbsp Everything Bagel Seasoning

Instructions:

  1. Wash the cucumbers thoroughly and slice them into rounds approximately 1/2 inch (1.3cm) thick.
  2. Lay the slices on a paper towel and sprinkle with the fine sea salt; let them sit for 5 minutes to draw out excess moisture.
  3. Pat the tops of the cucumber slices dry with a fresh paper towel to ensure the filling adheres.
  4. In a small bowl, beat the softened cream cheese until smooth and velvety.
  5. Stir in the sour cream, lemon juice, dried dill, and garlic powder until the mixture is airy and the color is uniform.
  6. Pipe or spoon a generous dollop of the cream cheese mixture onto each cucumber slice, leaving a small margin at the edge.
  7. Immediately press a cherry tomato quarter or a sprinkle of Everything Bagel seasoning into the center of the cream.
  8. Finish each bite with a snip of fresh chives for garnish.
