Ingredients:
- 2 English cucumbers (approx. 1.5 lbs / 680g)
- 1/2 tsp fine sea salt
- 8 oz cream cheese, softened
- 2 tbsp sour cream
- 1 tbsp fresh lemon juice
- 1 tsp dried dill
- 1/4 tsp garlic powder
- 1 cup cherry tomatoes, quartered
- 2 tbsp fresh chives, snipped
- 1 tbsp Everything Bagel Seasoning
Instructions:
- Wash the cucumbers thoroughly and slice them into rounds approximately 1/2 inch (1.3cm) thick.
- Lay the slices on a paper towel and sprinkle with the fine sea salt; let them sit for 5 minutes to draw out excess moisture.
- Pat the tops of the cucumber slices dry with a fresh paper towel to ensure the filling adheres.
- In a small bowl, beat the softened cream cheese until smooth and velvety.
- Stir in the sour cream, lemon juice, dried dill, and garlic powder until the mixture is airy and the color is uniform.
- Pipe or spoon a generous dollop of the cream cheese mixture onto each cucumber slice, leaving a small margin at the edge.
- Immediately press a cherry tomato quarter or a sprinkle of Everything Bagel seasoning into the center of the cream.
- Finish each bite with a snip of fresh chives for garnish.
