Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ tsp salt
  • ½ cup unsalted butter, chilled and cubed
  • 3-4 tbsp ice water
  • 2 cups fresh apricots, pitted and sliced
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 ½ cups buttermilk
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • ¼ tsp nutmeg (optional)
  • Pinch of salt

Instructions:

  1. In a bowl, combine flour and salt.
  2. Cut in chilled butter until the mixture resembles coarse crumbs.
  3. Stir in ice water, one tablespoon at a time, until dough forms.
  4. Form dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. In a large bowl, whisk together eggs, sugar, buttermilk, vanilla, cornstarch, nutmeg, and salt until smooth.
  7. Gently fold in sliced apricots.
  8. Roll out the chilled dough on a floured surface to fit the pie dish.
  9. Transfer the dough to the pie dish, trimming excess.
  10. Pour the apricot filling into the prepared crust.
  11. Place the pie on a baking sheet for easier handling.
  12. Bake for 50-60 minutes until the filling is set and the top is lightly golden.
  13. Allow the pie to cool before slicing.
