Ingredients:

  • 1 package (14 oz) of puff pastry, thawed (400 g)
  • 1 egg, beaten (for egg wash)
  • 8 oz brie cheese, cut into small pieces (225 g)
  • 1/4 cup fig jam or cranberry sauce (60 ml)
  • Fresh rosemary or thyme, finely chopped, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. On a lightly floured surface, roll out the thawed puff pastry to about 1/8-inch thickness.
  4. Use a sharp knife or pizza cutter to cut the pastry into 3-inch squares.
  5. Place a piece of brie and a dollop of fig jam/cranberry sauce in the center of each square. Sprinkle with herbs.
  6. Fold the corners of each pastry square toward the center and pinch to seal.
  7. Brush the tops of the sealed bites with the beaten egg for a golden finish.
  8. Place the bites on the prepared baking sheet and bake for 15 minutes or until golden brown and puffed.
  9. Allow them to cool slightly before serving warm.
