Ingredients:
- 6 ripe peaches (about 1.5 kg), halved and pitted
- 2 tablespoons (30 g) unsalted butter, melted
- 2 tablespoons (25 g) brown sugar
- 1 teaspoon ground cinnamon
- 1 cup (240 ml) heavy cream
- 1 cup (240 g) mascarpone cheese
- 1/2 cup (60 g) powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the melted butter, brown sugar, and cinnamon.
- Toss the peach halves in the sugar mixture until evenly coated. Arrange the peaches cut-side up in a baking dish.
- Bake in the preheated oven for 20-25 minutes or until tender and slightly caramelized. Remove from oven and let cool slightly.
- In a mixing bowl, whip the heavy cream until soft peaks form using an electric mixer. In another bowl, mix mascarpone cheese, powdered sugar, vanilla extract, and salt until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Spoon the creamy filling into the center of each baked peach half. Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with a sprinkle of ground cinnamon or drizzle of honey, if desired. Serve chilled and enjoy!
