Ingredients:

  • 6 ripe peaches (about 1.5 kg), halved and pitted
  • 2 tablespoons (30 g) unsalted butter, melted
  • 2 tablespoons (25 g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup (240 ml) heavy cream
  • 1 cup (240 g) mascarpone cheese
  • 1/2 cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). In a large mixing bowl, combine the melted butter, brown sugar, and cinnamon.
  2. Toss the peach halves in the sugar mixture until evenly coated. Arrange the peaches cut-side up in a baking dish.
  3. Bake in the preheated oven for 20-25 minutes or until tender and slightly caramelized. Remove from oven and let cool slightly.
  4. In a mixing bowl, whip the heavy cream until soft peaks form using an electric mixer. In another bowl, mix mascarpone cheese, powdered sugar, vanilla extract, and salt until smooth.
  5. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  6. Spoon the creamy filling into the center of each baked peach half. Chill in the refrigerator for at least 30 minutes before serving.
  7. Garnish with a sprinkle of ground cinnamon or drizzle of honey, if desired. Serve chilled and enjoy!
