Ingredients:

  • 1 cup (226 g) unsalted butter, melted
  • 1 ½ cups (300 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 ¾ cups (220 g) all-purpose flour
  • 1 teaspoon cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 oz (226 g) cream cheese, softened
  • ¼ cup (50 g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease or line the baking pan with parchment paper.
  3. In a mixing bowl, combine melted butter and sugar. Whisk in eggs, vanilla extract, and food coloring until smooth.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually combine dry ingredients with the wet mixture until fully incorporated.
  5. In another mixing bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla extract, mixing until just combined.
  6. Pour half of the brownie batter into the prepared pan. Dollop half of the cheesecake mixture over the brownie layer. Pour in the remaining brownie batter, and swirl the cheesecake mixture on top.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Allow brownies to cool in the pan before slicing into squares and serving.
