Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • ½ cup unsalted butter, chilled and cubed
  • ¾ cup milk (whole or buttermilk)
  • 2 medium apples, peeled, cored, and diced
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 egg, beaten, for egg wash
  • 1 tablespoon sugar for sprinkling

Instructions:

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. Cut in the chilled butter until mixture resembles coarse crumbs.
  3. Add milk slowly, mixing until just combined. Do not overwork.
  4. Turn out dough onto a floured surface and gently knead 2-3 times.
  5. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  6. In a medium bowl, combine diced apples, brown sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Stir until apples are well-coated.
  7. Preheat oven to 375°F (190°C). Roll out the chilled dough to about ½ inch thickness.
  8. Cut out rounds using a biscuit cutter.
  9. Place about 1 tablespoon of apple filling in the center of half the rounds.
  10. Top with remaining rounds, sealing edges carefully.
  11. Brush tops with beaten egg and sprinkle with sugar if desired.
  12. Place biscuits on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown.
  13. Let cool on a wire rack.
