Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- ½ cup unsalted butter, chilled and cubed
- ¾ cup milk (whole or buttermilk)
- 2 medium apples, peeled, cored, and diced
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (optional, for thickening)
- 1 egg, beaten, for egg wash
- 1 tablespoon sugar for sprinkling
Instructions:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in the chilled butter until mixture resembles coarse crumbs.
- Add milk slowly, mixing until just combined. Do not overwork.
- Turn out dough onto a floured surface and gently knead 2-3 times.
- Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
- In a medium bowl, combine diced apples, brown sugar, cinnamon, vanilla extract, lemon juice, and cornstarch. Stir until apples are well-coated.
- Preheat oven to 375°F (190°C). Roll out the chilled dough to about ½ inch thickness.
- Cut out rounds using a biscuit cutter.
- Place about 1 tablespoon of apple filling in the center of half the rounds.
- Top with remaining rounds, sealing edges carefully.
- Brush tops with beaten egg and sprinkle with sugar if desired.
- Place biscuits on a parchment-lined baking sheet. Bake for 15-20 minutes until golden brown.
- Let cool on a wire rack.
