Ingredients:
- 3 large ripe bananas (about 1 ½ cups mashed or 360g)
- 1/3 cup (75g) melted unsalted butter
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon ground cinnamon (optional)
- 1/2 cup (90g) chopped nuts (walnuts or pecans, optional)
- 1/2 cup (90g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease the cups.
- In a large bowl, mash the ripe bananas using a fork until smooth.
- Stir in the melted butter, followed by the sugar, beaten egg, and vanilla extract until combined.
- In another bowl, whisk together the baking soda, salt, cinnamon (if using), and flour.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing for optimal texture.
- If desired, fold in nuts or chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
