Ingredients:

  • 3 large ripe bananas (about 1 ½ cups mashed or 360g)
  • 1/3 cup (75g) melted unsalted butter
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup (90g) chopped nuts (walnuts or pecans, optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease the cups.
  2. In a large bowl, mash the ripe bananas using a fork until smooth.
  3. Stir in the melted butter, followed by the sugar, beaten egg, and vanilla extract until combined.
  4. In another bowl, whisk together the baking soda, salt, cinnamon (if using), and flour.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing for optimal texture.
  6. If desired, fold in nuts or chocolate chips.
  7. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
