Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 large egg
  • ½ cup (120ml) whole milk
  • 1/3 cup (80ml) vegetable oil
  • 1 tsp vanilla extract
  • ½ cup (120ml) boiling water
  • 12 oz (340g) dark or milk chocolate, chopped (or candy melts)
  • Sprinkles or decorations (optional)
  • Lollipop sticks

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour the cake pan.
  3. In a large mixing bowl, combine dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt).
  4. In a separate bowl, whisk together the egg, milk, oil, and vanilla; then add to the dry ingredients.
  5. Stir until just combined, then add boiling water to the batter, mixing until smooth.
  6. Pour batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely, then crumble it into a large bowl.
  8. Mix crumbled cake with frosting until well combined.
  9. Form into 1-inch (2.5cm) balls and place on a baking sheet. Chill for 30 minutes.
  10. Melt chocolate in a double boiler or microwave, stirring until smooth.
  11. Dip the end of each lollipop stick in melted chocolate, then insert into cake balls.
  12. Dip each cake pop into the chocolate coating, allowing excess to drip off.
  13. Decorate with sprinkles if desired and place upright in a Styrofoam block to set.
  14. Allow to cool completely before serving.
