Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/3 cup (40g) unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 large egg
- ½ cup (120ml) whole milk
- 1/3 cup (80ml) vegetable oil
- 1 tsp vanilla extract
- ½ cup (120ml) boiling water
- 12 oz (340g) dark or milk chocolate, chopped (or candy melts)
- Sprinkles or decorations (optional)
- Lollipop sticks
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease and flour the cake pan.
- In a large mixing bowl, combine dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt).
- In a separate bowl, whisk together the egg, milk, oil, and vanilla; then add to the dry ingredients.
- Stir until just combined, then add boiling water to the batter, mixing until smooth.
- Pour batter into the prepared pan and bake for 25 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely, then crumble it into a large bowl.
- Mix crumbled cake with frosting until well combined.
- Form into 1-inch (2.5cm) balls and place on a baking sheet. Chill for 30 minutes.
- Melt chocolate in a double boiler or microwave, stirring until smooth.
- Dip the end of each lollipop stick in melted chocolate, then insert into cake balls.
- Dip each cake pop into the chocolate coating, allowing excess to drip off.
- Decorate with sprinkles if desired and place upright in a Styrofoam block to set.
- Allow to cool completely before serving.
