Ingredients:
- 2 cups (240g) all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup (115g) unsalted butter, chilled and cubed
- 6-8 tablespoons (90-120ml) ice water
- 2 large apples (about 2 cups when diced)
- 1/4 cup (50g) brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon unsalted butter, melted
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Optional: powdered sugar for dusting
Instructions:
- Whisk together flour, salt, and sugar in a mixing bowl.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing until a dough forms.
- Shape into a disc, wrap in plastic, and chill for 30 minutes.
- Peel, core, and dice the apples.
- In a bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and melted butter.
- On a floured surface, roll out the chilled dough to about 1/8 inch thick.
- Cut into squares or circles, about 5x5 inches.
- Place a spoonful of filling in the center of each dough piece.
- Fold over and press edges securely to seal, using a fork to crimp if desired.
- Preheat the oven to 400°F (200°C).
- Whisk egg with milk for the egg wash; brush over the tops.
- Place turnovers on a parchment-lined baking sheet.
- Bake for 25-30 minutes, until golden brown.
- Cool on a wire rack before serving.
