Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cup (115g) unsalted butter, chilled and cubed
  • 6-8 tablespoons (90-120ml) ice water
  • 2 large apples (about 2 cups when diced)
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1 tablespoon unsalted butter, melted
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Optional: powdered sugar for dusting

Instructions:

  1. Whisk together flour, salt, and sugar in a mixing bowl.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, mixing until a dough forms.
  4. Shape into a disc, wrap in plastic, and chill for 30 minutes.
  5. Peel, core, and dice the apples.
  6. In a bowl, combine diced apples, brown sugar, cinnamon, lemon juice, and melted butter.
  7. On a floured surface, roll out the chilled dough to about 1/8 inch thick.
  8. Cut into squares or circles, about 5x5 inches.
  9. Place a spoonful of filling in the center of each dough piece.
  10. Fold over and press edges securely to seal, using a fork to crimp if desired.
  11. Preheat the oven to 400°F (200°C).
  12. Whisk egg with milk for the egg wash; brush over the tops.
  13. Place turnovers on a parchment-lined baking sheet.
  14. Bake for 25-30 minutes, until golden brown.
  15. Cool on a wire rack before serving.
