Ingredients:

  • 1 cup fruit juice (e.g., grape, orange, or apple)
  • 2 cups granulated sugar (divided)
  • 3 tablespoons gelatin powder
  • 1/4 teaspoon citric acid (optional for tartness)
  • 1/4 teaspoon salt
  • Cornstarch or powdered sugar, for dusting
  • Optional food coloring and flavor extracts to enhance the profile

Instructions:

  1. Prepare the Gelatin Mixture: In a small bowl, sprinkle the gelatin powder over 1/2 cup of cold fruit juice. Let it sit for about 5 minutes until it blooms and absorbs the liquid.
  2. Heat Remaining Juice: In a medium saucepan over medium heat, combine the remaining 1/2 cup of fruit juice with 1 cup of granulated sugar and salt. Stir frequently until the mixture comes to a gentle boil.
  3. Combine Gelatin and Sugar Mixture: Once boiling, remove from heat and stir in the bloomed gelatin mixture until completely dissolved. If using citric acid, add it at this stage along with any desired flavor extracts or food coloring.
  4. Pour into Molds: Lightly grease silicone molds or an 8x8-inch baking dish with oil or cooking spray. Pour the gummy mixture into prepared molds; ensure not to fill them completely if you want thicker gum drops.
  5. Chill to Set: Place your filled molds in the refrigerator for at least 4 hours, preferably overnight for best results.
  6. Unmold and Coat Gum Drops: Once set, carefully remove gum drops from their molds. Toss each piece in a bowl containing equal parts cornstarch and powdered sugar to prevent sticking.
  7. Store Properly: Store your homemade gum drops in an airtight container at room temperature for up to two weeks.
