Ingredients:

  • 2 cups rolled oats (180g)
  • ½ cup all-purpose flour (60g)
  • ½ cup brown sugar (100g)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted (60g)
  • 2 large eggs
  • 1 cup cream cheese, softened (240g)
  • ½ cup powdered sugar (60g)
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (as needed for consistency)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine oats, flour, baking soda, and salt. Whisk until blended.
  3. In a separate bowl, whisk melted butter, brown sugar, eggs, and vanilla extract until smooth. Gradually add the dry ingredients to the wet mixture. Stir until a thick dough forms. Chill for 30 minutes.
  4. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes, or until edges are lightly golden. Remove from oven and let cool on a rack.
  6. In a mixing bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and milk as needed for consistency.
  7. Once the cookies have cooled, spread or pipe filling onto the flat side of one cookie, and sandwich with another.
