Ingredients:
- 2 cups rolled oats (180g)
- ½ cup all-purpose flour (60g)
- ½ cup brown sugar (100g)
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ¼ cup unsalted butter, melted (60g)
- 2 large eggs
- 1 cup cream cheese, softened (240g)
- ½ cup powdered sugar (60g)
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (as needed for consistency)
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine oats, flour, baking soda, and salt. Whisk until blended.
- In a separate bowl, whisk melted butter, brown sugar, eggs, and vanilla extract until smooth. Gradually add the dry ingredients to the wet mixture. Stir until a thick dough forms. Chill for 30 minutes.
- Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until edges are lightly golden. Remove from oven and let cool on a rack.
- In a mixing bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract and milk as needed for consistency.
- Once the cookies have cooled, spread or pipe filling onto the flat side of one cookie, and sandwich with another.
