Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup unsweetened applesauce
- ½ cup whole milk
- 1 teaspoon vanilla extract
- 1 ½ cups peeled and diced apples (such as Granny Smith or Honeycrisp)
- 3 tablespoons granulated sugar for topping
- 1 teaspoon ground cinnamon for topping
- 2 tablespoons unsalted butter, melted
Instructions:
- Preheat the oven to 350°F (175°C) and grease the muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together the sugar, eggs, applesauce, milk, and vanilla extract until smooth.
- Fold in the diced apples to the wet ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined (do not overmix).
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- In a small bowl, mix together the sugar and cinnamon for the topping.
- Brush the tops of each muffin with melted butter and sprinkle generously with the cinnamon sugar mixture.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
