Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ½ cup whole milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • 3 tablespoons granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the sugar, eggs, applesauce, milk, and vanilla extract until smooth.
  4. Fold in the diced apples to the wet ingredients.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined (do not overmix).
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. In a small bowl, mix together the sugar and cinnamon for the topping.
  8. Brush the tops of each muffin with melted butter and sprinkle generously with the cinnamon sugar mixture.
  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
