Ingredients:

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • ¼ cup granulated sugar (for coating, optional)
  • 1 teaspoon ground cinnamon (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat softened butter and sugar until light and fluffy.
  4. Mix in eggs one at a time, then add vanilla extract until combined.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Cover the bowl and refrigerate dough for at least 30 minutes.
  7. Scoop dough and roll into balls; roll in sugar (and cinnamon, if using) and place on prepared baking sheets.
  8. Bake for 10-12 minutes, until edges are lightly golden and tops look set.
  9. Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack.
  10. Once cool, store in an airtight container.
