Ingredients:
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- ¼ cup granulated sugar (for coating, optional)
- 1 teaspoon ground cinnamon (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat softened butter and sugar until light and fluffy.
- Mix in eggs one at a time, then add vanilla extract until combined.
- Gradually add dry ingredients to wet mixture; mix until just combined.
- Cover the bowl and refrigerate dough for at least 30 minutes.
- Scoop dough and roll into balls; roll in sugar (and cinnamon, if using) and place on prepared baking sheets.
- Bake for 10-12 minutes, until edges are lightly golden and tops look set.
- Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack.
- Once cool, store in an airtight container.
