Ingredients:

  • 1 ½ cups all-purpose flour

  • ½ cup buttermilk, room temperature
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup fresh strawberries, finely chopped
  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1-2 tablespoons fresh strawberry puree
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease the donut pan lightly.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix buttermilk, beaten egg, melted butter, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the chopped strawberries.
  5. Transfer the batter into a piping bag or use a spoon to fill each donut cavity about ¾ full.
  6. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  8. In a bowl, beat together powdered sugar, softened butter, strawberry puree, vanilla extract, and salt until smooth.
  9. Dip or spread the frosting over the cooled donuts and allow them to set.
