Ingredients:

  • 1 medium sweet potato (about 1 cup mashed, cooked and cooled)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 1 ½ cups milk (or plant-based alternative)
  • ¼ cup unsalted butter, melted (or coconut oil)
  • 2 tablespoons brown sugar (or maple syrup)

Instructions:

  1. Preheat the oven to 400°F (200°C). Wash and poke holes in the sweet potato, then bake for about 30-40 minutes until tender. Once cooled, scoop out and mash until smooth. Set aside.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, then add the mashed sweet potato, milk, melted butter, and brown sugar. Mix until combined.
  4. Pour the wet ingredients into the dry ingredients. Gently mix until just combined; do not overmix; lumps are okay.
  5. Preheat your waffle maker according to the manufacturers instructions.
  6. Lightly grease the waffle maker, then pour the batter onto the center of the waffle iron. Close the lid and cook until golden brown and crispy, usually 4-5 minutes.
  7. Carefully remove the waffles and serve warm, topped with your choice of toppings.
