Ingredients:
- 1 medium sweet potato (about 1 cup mashed, cooked and cooled)
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 2 large eggs
- 1 ½ cups milk (or plant-based alternative)
- ¼ cup unsalted butter, melted (or coconut oil)
- 2 tablespoons brown sugar (or maple syrup)
Instructions:
- Preheat the oven to 400°F (200°C). Wash and poke holes in the sweet potato, then bake for about 30-40 minutes until tender. Once cooled, scoop out and mash until smooth. Set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs, then add the mashed sweet potato, milk, melted butter, and brown sugar. Mix until combined.
- Pour the wet ingredients into the dry ingredients. Gently mix until just combined; do not overmix; lumps are okay.
- Preheat your waffle maker according to the manufacturers instructions.
- Lightly grease the waffle maker, then pour the batter onto the center of the waffle iron. Close the lid and cook until golden brown and crispy, usually 4-5 minutes.
- Carefully remove the waffles and serve warm, topped with your choice of toppings.
