- 1/2 cup unsalted butter, cold and cubed
- 2/3 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup fresh blueberries or chocolate chips (optional)
- 1 tablespoon coarse sugar (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add cubed cold butter to the dry mixture. Use a pastry cutter or fork to cut the butter into the flour until it resembles coarse crumbs.
- In a separate bowl, whisk together heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry mixture, adding any optional add-ins. Stir gently until just combined.
- Turn the dough onto a floured surface and gently knead until it forms a cohesive ball. Pat into a 1-inch thick circle.
- Use a sharp knife or bench scraper to cut the dough into 8 wedges. Place on a parchment-lined baking sheet.
- Brush the tops of scones with extra cream and sprinkle with coarse sugar.
- Bake in preheated oven for 15-20 minutes, or until the scones are golden brown on top.
- Allow scones to cool slightly on a wire rack before serving.
