Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup (60g) unsalted butter, chilled and cubed
  • 1 cup (240ml) buttermilk
  • 1/2 cup (60g) sharp cheddar cheese, grated
  • 1/4 cup (15g) fresh chives, chopped
  • 1 clove garlic, minced

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Add the cubed butter to the dry mixture. Use a pastry cutter or forks to blend until the mixture resembles coarse crumbs.
  4. Stir in the grated cheddar cheese, chopped chives, and minced garlic until evenly distributed.
  5. Pour in the buttermilk and gently mix until just combined. Do not overwork the dough.
  6. Cover the dough with plastic wrap and chill for 10 minutes for easier handling.
  7. Turn the dough onto a lightly floured surface. Pat it into a 1-inch thick rectangle and cut out biscuits using a cutter.
  8. Place biscuits on a parchment-lined baking sheet, ensuring they are touching slightly. Bake for 15-20 minutes or until golden brown on top.
  9. Transfer to a cooling rack. Brush with melted butter, if desired.
