Ingredients:

  • 1 cup dark chocolate chips (preferably 70% cacao)
  • 1/4 cup unsweetened almond milk
  • 1/4 cup granulated sugar
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup whole almonds, roughly chopped
  • Additional dark chocolate chips for drizzling (optional, about 1/4 cup)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine dark chocolate chips and almond milk. Melt in the microwave in 30-second intervals, stirring in between, until smooth.
  3. Add sugar, almond flour, vanilla extract, and sea salt to the melted chocolate. Whisk until completely combined and smooth.
  4. Gently fold in the chopped almonds until evenly distributed.
  5. Using a spoon or cookie scoop, portion the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12 minutes or until the edges are firm and the tops look slightly glossy.
  7. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. If desired, melt additional chocolate chips and drizzle over the treats once cooled.
