Ingredients:

  • 1 cup (100g) rolled oats
  • ½ cup (60g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (90g) dark chocolate chips or chunks
  • ½ cup (75g) chopped nuts (e.g., walnuts or pecans)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, flour, baking soda, and salt. Set aside.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract into the butter mixture until well incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips and chopped nuts.
  7. Using a cookie scoop or tablespoon, drop dough onto a prepared baking sheet, spaced apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to completely cool.
