Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) packed light brown sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tbsp (6g) chai spice blend
  • 2 tsp (6g) instant espresso powder
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 cup (120g) powdered sugar
  • 1 tbsp (15ml) strong brewed coffee
  • 1 tbsp (15ml) heavy cream
  • 1/4 tsp (1.5g) ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, whisk the melted butter and brown sugar until smooth, then beat in the egg and vanilla extract.
  3. Sift in the flour, chai spices, espresso powder, baking soda, and salt; stir with a spatula until just combined.
  4. Press the dough evenly into the prepared pan and bake for 25–30 minutes until edges are deep golden brown and the center is slightly soft.
  5. Whisk together powdered sugar, cooled espresso, heavy cream, and cinnamon until a thick glaze forms.
  6. Pour the glaze over the warm bars, spread to the edges, and let set for 15 minutes before slicing into 16 squares.
