Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) packed light brown sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tbsp (6g) chai spice blend
- 2 tsp (6g) instant espresso powder
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (120g) powdered sugar
- 1 tbsp (15ml) strong brewed coffee
- 1 tbsp (15ml) heavy cream
- 1/4 tsp (1.5g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, whisk the melted butter and brown sugar until smooth, then beat in the egg and vanilla extract.
- Sift in the flour, chai spices, espresso powder, baking soda, and salt; stir with a spatula until just combined.
- Press the dough evenly into the prepared pan and bake for 25–30 minutes until edges are deep golden brown and the center is slightly soft.
- Whisk together powdered sugar, cooled espresso, heavy cream, and cinnamon until a thick glaze forms.
- Pour the glaze over the warm bars, spread to the edges, and let set for 15 minutes before slicing into 16 squares.
