Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (45g) Dutch-process cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (2g) baking powder
- 0.5 tsp (3g) fine sea salt
- 0.75 cup (150g) coconut sugar
- 1 large (50g) egg
- 0.33 cup (80ml) avocado oil
- 0.5 cup (120ml) Greek yogurt, plain
- 1 tsp (5ml) pure vanilla extract
- 1.5 cups (225g) grated zucchini, lightly pressed
- 0.5 cup (85g) semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the large holes of a box grater. Gently press the shreds with a paper towel to remove excess water. Note: Don't squeeze it bone dry or the bread will be too dense.
- Sift the all purpose flour, Dutch cocoa powder, baking soda, baking powder, and salt into a large bowl.
- Whisk in the coconut sugar until the cocoa clumps disappear and the mixture looks like a uniform brown powder.
- Create a well in the center of the dry ingredients.
- Pour in the egg, avocado oil, Greek yogurt, and vanilla extract. Stir with a spatula until just combined. Note: Overmixing here creates a tough, rubbery loaf.
- Gently fold in the pressed zucchini and semi sweet chocolate chips. The batter should be thick and smell strongly of rich cocoa.
- Pour the batter into a parchment lined 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 50-55 minutes. Wait until a toothpick inserted into the center comes out with just a few moist crumbs.
