Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon (6g) baking powder
- ½ teaspoon (3g) baking soda
- ¼ teaspoon (1g) salt
- ½ cup (120ml) vegetable oil
- 1 large egg, whisked
- 1 teaspoon (5ml) vanilla extract
- 1 tablespoon (15g) unsweetened cocoa powder
- 1 cup (240ml) buttermilk
- 1 tablespoon (15ml) red food coloring (gel or liquid)
- 8 oz (226g) cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 4 cups (480g) powdered sugar
- 1 teaspoon (5ml) vanilla extract
- 1-2 tablespoons (15-30ml) milk for desired consistency
Instructions:
- Prepare the baking pan by greasing or lining it.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, cocoa powder, and salt.
- In another bowl, whisk together oil, egg, vanilla extract, buttermilk, and red food coloring.
- Gradually add the wet mixture to the dry mixture, stirring gently until just combined.
- Pour batter into the prepared pan and bake in the Easy-Bake Oven (or regular oven) for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool in the pan for 10 minutes. Transfer to a cooling rack to cool completely.
- In a bowl, beat softened cream cheese and butter until creamy. Gradually add powdered sugar and mix until smooth. Add vanilla and milk to achieve a spreadable consistency.
- Once the cake is completely cool, spread cream cheese frosting over the top, slice, and serve.
