Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon (6g) baking powder
  • ½ teaspoon (3g) baking soda
  • ¼ teaspoon (1g) salt
  • ½ cup (120ml) vegetable oil
  • 1 large egg, whisked
  • 1 teaspoon (5ml) vanilla extract
  • 1 tablespoon (15g) unsweetened cocoa powder
  • 1 cup (240ml) buttermilk
  • 1 tablespoon (15ml) red food coloring (gel or liquid)
  • 8 oz (226g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 1 teaspoon (5ml) vanilla extract
  • 1-2 tablespoons (15-30ml) milk for desired consistency

Instructions:

  1. Prepare the baking pan by greasing or lining it.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk together oil, egg, vanilla extract, buttermilk, and red food coloring.
  4. Gradually add the wet mixture to the dry mixture, stirring gently until just combined.
  5. Pour batter into the prepared pan and bake in the Easy-Bake Oven (or regular oven) for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from oven and let cool in the pan for 10 minutes. Transfer to a cooling rack to cool completely.
  7. In a bowl, beat softened cream cheese and butter until creamy. Gradually add powdered sugar and mix until smooth. Add vanilla and milk to achieve a spreadable consistency.
  8. Once the cake is completely cool, spread cream cheese frosting over the top, slice, and serve.
