Ingredients:

  • 1 packet taco seasoning mix (or homemade)
  • 12 whole wheat tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups salsa
  • 2 cans (12.5 oz each) canned chicken or shredded rotisserie chicken
  • 2 cups low-fat cottage cheese
  • 2 cups shredded mozzarella cheese
  • (Optional) chopped green onions for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the canned chicken with the taco seasoning mix until well blended.
  3. Spread a thin layer of salsa on the bottom of a baking dish.
  4. Place three tortillas over the salsa to form the first layer.
  5. Add half of the chicken mixture over the tortillas, followed by half of the black beans and corn.
  6. Spoon another cup of salsa over this layer, then sprinkle with one cup of mozzarella cheese.
  7. Repeat layers starting again with three tortillas, adding remaining ingredients in order—chicken mixture, black beans and corn, salsa—ending with three more tortillas on top.
  8. Top final tortilla layer with remaining salsa and sprinkle evenly with cottage cheese and remaining mozzarella cheese.
  9. Remove foil and bake for an additional 10–15 minutes, or until cheese is bubbly and golden brown.
  10. Allow to cool slightly before slicing into squares; serve warm topped with chopped green onions if desired.
