Ingredients:
- 1 packet taco seasoning mix (or homemade)
- 12 whole wheat tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups salsa
- 2 cans (12.5 oz each) canned chicken or shredded rotisserie chicken
- 2 cups low-fat cottage cheese
- 2 cups shredded mozzarella cheese
- (Optional) chopped green onions for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the canned chicken with the taco seasoning mix until well blended.
- Spread a thin layer of salsa on the bottom of a baking dish.
- Place three tortillas over the salsa to form the first layer.
- Add half of the chicken mixture over the tortillas, followed by half of the black beans and corn.
- Spoon another cup of salsa over this layer, then sprinkle with one cup of mozzarella cheese.
- Repeat layers starting again with three tortillas, adding remaining ingredients in order—chicken mixture, black beans and corn, salsa—ending with three more tortillas on top.
- Top final tortilla layer with remaining salsa and sprinkle evenly with cottage cheese and remaining mozzarella cheese.
- Remove foil and bake for an additional 10–15 minutes, or until cheese is bubbly and golden brown.
- Allow to cool slightly before slicing into squares; serve warm topped with chopped green onions if desired.
