Ingredients:
- 16 oz cream cheese, softened
- 1 cup ranch dressing
- 1/2 cup buffalo hot sauce
- 3 cups shredded rotisserie chicken breast
- 1.5 cups sharp cheddar cheese, shredded
- 1/2 cup Monterey Jack cheese, shredded
- 1/4 cup blue cheese crumbles
- 2 tbsp sliced green onions
Instructions:
- Preheat your oven to 190°C. Note: A hot oven ensures the cheese melts before the sauce can break.
- Place the 16 oz softened cream cheese in a large bowl and beat until smooth.
- Fold in the 1 cup ranch dressing and 1/2 cup buffalo hot sauce until the mixture is a uniform orange hue.
- Add the 3 cups shredded rotisserie chicken and 1 cup of the sharp cheddar.
- Stir gently until the chicken is completely coated in the velvety sauce.
- Transfer the mixture into a 23x23 cm baking dish, smoothing the top with your spatula.
- Sprinkle the remaining 0.5 cup sharp cheddar, 1/2 cup Monterey Jack, and 1/4 cup blue cheese crumbles over the top.
- Bake for 20 minutes until the edges are bubbling and the cheese is golden and molten.
- Remove from the oven and let it stand for 5 minutes. Note: This allows the fats to set slightly so it's not too runny.
- Garnish with 2 tbsp sliced green onions and serve immediately.
