Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine cherries, ¾ cup sugar, lemon juice, cornstarch, vanilla, and almond extract until well mixed.
- Pour the cherry filling into the prepared baking dish evenly.
- In a bowl, whisk together 2 cups flour, ¼ cup sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined; avoid overmixing.
- Drop spoonfuls of the biscuit mixture over the cherry filling.
- Optionally brush the tops with the beaten egg for a golden finish.
- Bake for 35-40 minutes or until the biscuit topping is golden brown and the cherry filling is bubbling.
- Let the cobbler cool for at least 10-15 minutes before serving.
