Ingredients:

  • 4 cups fresh or frozen cherries, pitted
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup milk
  • 1 large egg (for egg wash, optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine cherries, ¾ cup sugar, lemon juice, cornstarch, vanilla, and almond extract until well mixed.
  3. Pour the cherry filling into the prepared baking dish evenly.
  4. In a bowl, whisk together 2 cups flour, ¼ cup sugar, baking powder, and salt.
  5. Cut in the cold butter until the mixture resembles coarse crumbs.
  6. Stir in the milk until just combined; avoid overmixing.
  7. Drop spoonfuls of the biscuit mixture over the cherry filling.
  8. Optionally brush the tops with the beaten egg for a golden finish.
  9. Bake for 35-40 minutes or until the biscuit topping is golden brown and the cherry filling is bubbling.
  10. Let the cobbler cool for at least 10-15 minutes before serving.
