Ingredients:

  • 1/4 cup (40g) chia seeds
  • 1 cup (240ml) unsweetened almond milk
  • 2 tbsp (30ml) maple syrup
  • 1/2 tsp (2.5ml) vanilla extract
  • 1 pinch (0.5g) salt
  • 1/4 cup (60g) plain Greek yogurt

Instructions:

  1. Combine the chia seeds, almond milk, maple syrup, vanilla, and salt in a mixing bowl or directly in two glass jars. Whisk vigorously for 60 seconds until the mixture is homogenous and no dry clumps of seeds remain.
  2. Let the mixture sit on the counter for 5 to 10 minutes, then stir it a second time to prevent the seeds from settling at the bottom and ensure a uniform, velvety texture.
  3. Seal the jars tightly and place them in the refrigerator to chill for at least 8 hours or overnight until the pudding reaches a thick, gel-like consistency.
