Ingredients:

- 1 cup (240ml) unsweetened almond milk
- 2 tbsp (30ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) salt
- 1/4 cup (60g) plain Greek yogurt
Instructions:
- Combine the chia seeds, almond milk, maple syrup, vanilla, and salt in a mixing bowl or directly in two glass jars. Whisk vigorously for 60 seconds until the mixture is homogenous and no dry clumps of seeds remain.
- Let the mixture sit on the counter for 5 to 10 minutes, then stir it a second time to prevent the seeds from settling at the bottom and ensure a uniform, velvety texture.
- Seal the jars tightly and place them in the refrigerator to chill for at least 8 hours or overnight until the pudding reaches a thick, gel-like consistency.
