Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) ground cinnamon
  • ½ tsp (3g) salt
  • ½ cup (120ml) vegetable oil
  • 2 large (100g) eggs
  • ½ cup (120ml) sour cream
  • 1 tsp (5ml) vanilla extract
  • 3 cups (450g) fresh apples, peeled and diced
  • 1 tbsp (8g) all-purpose flour
  • ½ tsp (1g) ground nutmeg

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan with butter or non-stick spray and lightly dust with flour.
  2. In a medium bowl, whisk together the 250g flour, sugar, baking soda, cinnamon, and salt until no clumps remain.
  3. In a large bowl, beat eggs and sugar until pale, then whisk in the vegetable oil, sour cream, and vanilla extract until velvety.
  4. Gradually pour the dry ingredients into the wet mixture and stir with a spatula just until the streaks of flour disappear.
  5. In a separate bowl, toss diced apples with 1 tablespoon of flour and nutmeg. Gently fold the apples into the batter.
  6. Pour batter into the prepared pan and bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.
