Ingredients:
- 8 oz Block Feta Cheese (drained)
- 4 oz Cream Cheese (softened)
- 2 Tbsp Plain Greek Yogurt (for Feta Base)
- 1 Tbsp Lemon Juice (freshly squeezed)
- 1 Clove Garlic (minced finely)
- Freshly ground Black Pepper, to taste
- 1 Cup Plain Greek Yogurt (for Tzatziki)
- 1/2 English Cucumber (Peeled, seeded, finely grated/diced)
- 1 Tbsp Fresh Dill (chopped)
- 1 Tbsp Fresh Mint (chopped)
- 1 Tsp Lemon Zest
- 1 Large Tomato (seeded and finely diced)
- 1/2 Cup Kalamata Olives (pitted and halved)
- 1/4 Small Red Onion (very finely minced)
- 1/4 Cup Fresh Parsley (chopped, for sprinkling)
- 2 Tbsp Extra Virgin Olive Oil
- Optional: Dried Oregano or Smoked Paprika
Instructions:
- Grate or finely dice the cucumber for the Tzatziki layer. Place it in a fine-mesh sieve, sprinkle lightly with salt, and let it drain for 15 minutes. Pat dry thoroughly before using.
- Create the Feta Base (Layer 1): In a food processor, combine the drained feta, softened cream cheese, 2 Tbsp Greek yogurt, lemon juice, and minced garlic. Process until completely smooth and fluffy. Taste and season with pepper.
- Assemble Layer 1: Spread the entire Feta mixture evenly across the bottom of your 9-inch pie dish or serving dish, ensuring the base is smooth.
- Prepare the Tzatziki (Layer 2): In a medium bowl, mix the remaining 1 cup of Greek yogurt with the dried cucumber, fresh dill, mint, and lemon zest.
- Assemble Layer 2: Gently spoon the Tzatziki mixture over the Feta Base, spreading it carefully to avoid disturbing the layer beneath.
- Prep Toppings (Layer 3): In a small bowl, gently toss the diced tomato, halved olives, and minced red onion together.
- Assemble Layer 3: Evenly distribute the vegetable and olive mixture over the Tzatziki layer.
- Chill: Cover the dish tightly and refrigerate for at least 30 minutes (preferably 1 hour) to allow the layers to set firmly.
- Garnish and Serve (Layer 4): Just before serving, sprinkle the top generously with fresh parsley. Drizzle the entire surface with high-quality extra virgin olive oil and add an optional dusting of oregano.
