Ingredients:

  • 3 medium zucchini, sliced into quarters lengthwise (about 1 lb / 450g)
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tsp dried oregano
  • 1 tsp lemon zest

Instructions:

  1. Wash and dry the zucchini thoroughly. Slice each zucchini lengthwise into quarters to create long spears.
  2. In a large bowl, whisk together the lemon juice, minced garlic, salt, pepper, oregano, and lemon zest. Add the zucchini spears and the olive oil, tossing gently until thinly coated. Do not marinate for more than 10 minutes.
  3. Preheat the grill to high heat (approx. 400°F / 200°C) and lightly oil the grates. Place the zucchini spears across the grates.
  4. Grill for 3–5 minutes per side until deep mahogany-colored grill marks appear and the center remains al dente.
