Ingredients:
- 6 medium peaches, peeled and sliced (about 700g / 1.5 lbs)
- 1/2 cup (100g / 3.5 oz) granulated sugar
- 1 tablespoon lemon juice (15 ml / 0.5 fl oz)
- 1/2 teaspoon ground cinnamon (2.5ml)
- 2 tablespoons all-purpose flour (16g / 0.6 oz)
- 1 cup Bisquick baking mix (120g / 4.2 oz)
- 1/2 cup (120 ml / 4 fl oz) milk (any kind)
- 1/4 cup (50g / 1.75 oz) melted unsalted butter
- 2 tablespoons granulated sugar, for sprinkling
Instructions:
- Preheat oven to 375°F (190°C / Gas Mark 5).
- In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and flour. Toss gently to coat.
- Pour the peach mixture into the prepared baking dish.
- In a separate bowl, whisk together Bisquick, milk, and melted butter until just combined. Do not overmix.
- Drop spoonfuls of the Bisquick mixture evenly over the peach filling.
- Sprinkle the top of the Bisquick topping with the remaining 2 tablespoons of sugar.
- Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
- Let the cobbler cool for at least 15 minutes before serving.
