Ingredients:

  • 6 medium peaches, peeled and sliced (about 700g / 1.5 lbs)
  • 1/2 cup (100g / 3.5 oz) granulated sugar
  • 1 tablespoon lemon juice (15 ml / 0.5 fl oz)
  • 1/2 teaspoon ground cinnamon (2.5ml)
  • 2 tablespoons all-purpose flour (16g / 0.6 oz)
  • 1 cup Bisquick baking mix (120g / 4.2 oz)
  • 1/2 cup (120 ml / 4 fl oz) milk (any kind)
  • 1/4 cup (50g / 1.75 oz) melted unsalted butter
  • 2 tablespoons granulated sugar, for sprinkling

Instructions:

  1. Preheat oven to 375°F (190°C / Gas Mark 5).
  2. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and flour. Toss gently to coat.
  3. Pour the peach mixture into the prepared baking dish.
  4. In a separate bowl, whisk together Bisquick, milk, and melted butter until just combined. Do not overmix.
  5. Drop spoonfuls of the Bisquick mixture evenly over the peach filling.
  6. Sprinkle the top of the Bisquick topping with the remaining 2 tablespoons of sugar.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
  8. Let the cobbler cool for at least 15 minutes before serving.
