Ingredients:
- 1 ready-rolled Puff Pastry Sheet (14 oz / 400 grams)
- 3 Tbsp Pizza Sauce or Passata (thickened)
- 1 cup Shredded Low-Moisture Mozzarella, lightly packed (120 grams)
- 1/4 cup Grated Parmesan Cheese (25 grams)
- 1/4 cup Fresh Basil Leaves, roughly chopped
- 1 tsp Dried Oregano
- 1/2 tsp Garlic Powder
- Sea Salt and Black Pepper, To taste
- 1 large Egg (for egg wash)
- 1 tsp Water or Milk (for egg wash)
Instructions:
- Thaw the puff pastry according to package instructions. Preheat your oven to 200°C (395°F) and line two baking sheets with parchment paper.
- Unroll the puff pastry sheet onto a lightly floured surface. Using a rolling pin, gently smooth it out to approximately 35cm x 25cm (14 in x 10 in).
- In a medium bowl, combine the mozzarella, Parmesan, chopped fresh basil, dried oregano, garlic powder, salt, and pepper. Toss well to create the filling mixture.
- Spread the 3 tablespoons of thick pizza sauce evenly across the entire surface of the pastry sheet, leaving a 1 cm (1/2 inch) border along one of the long edges bare (this will be the seal). Use sauce sparingly to avoid a soggy middle.
- Sprinkle the entire cheese and herb mixture evenly over the sauced pastry. Starting from the long edge opposite the bare border, carefully and tightly roll the pastry into a neat log. Press firmly to seal the log closed along the bare edge.
- Wrap the pastry log tightly in plastic wrap. Transfer the log to the refrigerator for 30 minutes (or the freezer for 15 minutes). This essential chilling step ensures clean, neat slices.
- Remove the chilled log and unwrap. Using a sharp, non-serrated knife, slice the log into pieces approximately 1.5 cm (1/2 inch) thick. You should yield 24–30 pinwheels.
- Place the pinwheels flat side down on the prepared baking sheets, leaving about 2 cm (1 inch) between them. Whisk the egg and water/milk together to form the egg wash. Lightly brush the tops of the pinwheels for a glossy, golden finish.
- Bake for 18–20 minutes, rotating the trays halfway through, until the pastry is puffed up, golden brown, and the cheese is melted and bubbling.
- Allow the Pizza Bites to cool on the tray for 5 minutes before serving warm, optionally alongside marinara sauce for dipping.
