Ingredients:
- 1 box (15.25 oz / 432g) Spice Cake Mix
- 1 can (15 oz / 425g) Pure Pumpkin Puree
- 1/2 cup (120ml) Water
- 1 tsp (5g) Ground Cinnamon
- 8 oz (225g) Full-fat Cream Cheese, softened
- 1/2 cup (115g) Unsalted Butter, softened
- 3 cups (360g) Powdered Sugar, sifted
- 1 tsp (5ml) Vanilla Extract
- 1 pinch (1g) Salt
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan with butter or non-stick spray.
- In a large bowl, combine the spice cake mix, pumpkin puree, water (or apple cider), and ground cinnamon.
- Stir with a spatula until the batter is a uniform mahogany color and no dry streaks remain.
- Pour the batter into the prepared pan, smooth the top, and bake for 25-30 minutes.
- Perform the toothpick test: insert a toothpick into the center; it should come out clean or with a few moist crumbs.
- Let the cake cool completely in the pan to ensure the structure sets.
- Beat the softened cream cheese and butter together using an electric hand mixer until smooth and pale.
- Gradually add powdered sugar, vanilla, and salt, whipping on high until the frosting is light and airy.
- Spread a thick, velvety layer of frosting over the cooled cake.
