- 4-6 tablespoons ice water
- 4 large eggs
- 1 cup heavy cream
- 1 cup milk

- 1 cup shredded cheese (such as Gruyère or cheddar)
- 1 cup diced cooked ham or cooked vegetables
- Salt and pepper to taste

Instructions:
- In a bowl, combine flour and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Gradually add ice water until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and chill for 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the chilled dough.
- Fit the dough into the pie pan and trim the edges.
- In a mixing bowl, whisk together eggs, cream, milk, Dijon mustard, salt, and pepper.
- Stir in cheese and chosen meat or vegetables.
- Pour the filling into the prepped crust.
- Place the pie on a baking sheet to catch any spills.
- Bake for 35-40 minutes or until the filling is set and edges are golden brown.
- Let the quiche cool for 10 minutes before slicing.
