  • 4 large eggs
  • 1 cup heavy cream

  • 1 cup shredded cheese (such as Gruyère or cheddar)
  • 1 cup diced cooked ham or cooked vegetables
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine flour and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gradually add ice water until the dough comes together.
  4. Shape the dough into a disk, wrap in plastic wrap, and chill for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. On a floured surface, roll out the chilled dough.
  7. Fit the dough into the pie pan and trim the edges.
  8. In a mixing bowl, whisk together eggs, cream, milk, Dijon mustard, salt, and pepper.
  9. Stir in cheese and chosen meat or vegetables.
  10. Pour the filling into the prepped crust.
  11. Place the pie on a baking sheet to catch any spills.
  12. Bake for 35-40 minutes or until the filling is set and edges are golden brown.
  13. Let the quiche cool for 10 minutes before slicing.
  14. Garnish with fresh herbs if desired, and serve warm.
