Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 green onions, sliced
  • Sesame seeds

Instructions:

  1. In a mixing bowl, combine honey, soy sauce, minced garlic, vinegar, ground ginger, and black pepper. Whisk until well blended.
  2. Place the chicken thighs at the bottom of the slow cooker.
  3. Drizzle the prepared sauce over the chicken, ensuring all pieces are well coated.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours. Check for doneness - the chicken should reach an internal temperature of 165°F.
  5. If desired, remove the chicken, mix cornstarch with cold water, stir into the sauce, and cook on high for an additional 15-20 minutes until thickened.
  6. Shred or serve the chicken whole, topping with sliced green onions and sesame seeds.
