Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tbsp rice vinegar
- 1 tsp ground ginger
- 1/2 tsp black pepper
- 1 tbsp cornstarch (optional, for thickening)
- 2 green onions, sliced
- Sesame seeds
Instructions:
- In a mixing bowl, combine honey, soy sauce, minced garlic, vinegar, ground ginger, and black pepper. Whisk until well blended.
- Place the chicken thighs at the bottom of the slow cooker.
- Drizzle the prepared sauce over the chicken, ensuring all pieces are well coated.
- Cover and cook on low for 4-6 hours or high for 2-3 hours. Check for doneness - the chicken should reach an internal temperature of 165°F.
- If desired, remove the chicken, mix cornstarch with cold water, stir into the sauce, and cook on high for an additional 15-20 minutes until thickened.
- Shred or serve the chicken whole, topping with sliced green onions and sesame seeds.
