Ingredients:
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butterscotch chips
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup chopped walnuts or pecans (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture until just combined.
- Spread half of the batter into the prepared baking dish evenly using a spatula. Bake in preheated oven for about 10 minutes.
- Remove from oven; sprinkle butterscotch chips over baked layer followed by semi-sweet chocolate chips and chopped nuts if desired. Drop spoonfuls of remaining batter on top to cover as much as possible (its okay if some toppings peek through).
- Return to oven and bake for an additional 20–25 minutes or until golden brown around edges. A toothpick inserted in center should come out clean when done.
- Allow bars to cool completely in pan on wire rack before slicing into squares.
