Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butterscotch chips
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture until just combined.
  4. Spread half of the batter into the prepared baking dish evenly using a spatula. Bake in preheated oven for about 10 minutes.
  5. Remove from oven; sprinkle butterscotch chips over baked layer followed by semi-sweet chocolate chips and chopped nuts if desired. Drop spoonfuls of remaining batter on top to cover as much as possible (its okay if some toppings peek through).
  6. Return to oven and bake for an additional 20–25 minutes or until golden brown around edges. A toothpick inserted in center should come out clean when done.
  7. Allow bars to cool completely in pan on wire rack before slicing into squares.
