Ingredients:

  • 2 lbs (900g) pork spare ribs or baby back ribs, cut into sections to fit your crockpot
  • 1 tbsp (15ml) smoked paprika
  • 1 tsp (5ml) garlic powder
  • 1 tsp (5ml) onion powder
  • 1/2 tsp (2.5ml) ground black pepper
  • 1/4 tsp (1.25ml) cayenne pepper (optional, for a little kick)
  • 1 cup (240ml) your favorite BBQ sauce
  • 1/4 cup (60ml) apple cider vinegar
  • 2 tablespoons brown sugar, packed (30 ml)

Instructions:

  1. In a small bowl, combine the smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper (if using).
  2. Generously rub the spice mixture all over the ribs, ensuring they are well coated.
  3. Place the seasoned ribs in the crockpot, arranging them in a single layer if possible. You might need to stack them slightly if your crockpot is smaller.
  4. Pour the BBQ sauce and apple cider vinegar over the ribs. Sprinkle with brown sugar.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the ribs are very tender and easily pull apart.
  6. For a caramelized finish, carefully remove the ribs from the crockpot and place them on a baking sheet. Brush with extra BBQ sauce and broil in the oven for 2-3 minutes, or grill for 2-3 minutes per side, watching carefully to prevent burning.
