Ingredients:
- ½ cup Granulated Sugar
- ½ cup Filtered Water
- ¼ cup Fresh Cranberries (lightly crushed)
- 3 sprigs Fresh Rosemary Sprigs (about 4 inches long)
- 1 large Cinnamon Stick
- 4 fl oz High-Quality Dry Gin
- 5 fl oz Spiced Rosemary Syrup (chilled)
- 5 fl oz Fresh Lime Juice
- 25 fl oz Dry Vermouth (optional)
- Ice (As needed)
- 2 small sprigs of fresh rosemary (for garnish)
- A twist of lime zest or a skewer of sugared cranberries (for garnish)
Instructions:
- In a small saucepan, combine the water, sugar, crushed cranberries, rosemary sprigs, and cinnamon stick.
- Heat the mixture over medium heat, stirring gently until the sugar is fully dissolved. Bring the mixture to a gentle simmer (do not boil aggressively).
- Remove the pan from the heat immediately after simmering. Let the mixture steep for 10–15 minutes until it achieves a deep, vibrant pink/red colour.
- Strain the syrup through a fine-mesh sieve (pressing lightly on the solids) into an airtight container. Discard the solids. Cool the syrup to room temperature, then chill thoroughly in the refrigerator for at least 30 minutes.
- Place the martini glasses or coupes in the freezer while preparing the cocktail. A cold glass is paramount!
- In the cocktail shaker, combine the gin, the chilled Spiced Rosemary Syrup, fresh lime juice, and Dry Vermouth (if using).
- Fill the shaker two-thirds full with fresh, solid ice cubes. Seal the lid tightly and shake hard for 15–20 seconds until the outside of the shaker is thoroughly frosted.
- Double-strain the mixture into the pre-chilled glasses. Express the lime twist over the surface of the drink to release the oils, then add a small rosemary sprig or sugared cranberries. Serve immediately.
