Ingredients:
- 1 pound (450g) ground beef (or ground turkey or chicken)
- 1 large onion, chopped
- 1 packet (1 ounce / 28g) taco seasoning
- 1 (15 ounce / 425g) can black beans, rinsed and drained
- 1 (15 ounce / 425g) can corn, drained
- 1 (10 ounce / 280g) can diced tomatoes and green chilies (Rotel), undrained
- 1 (16 ounce / 450g) jar salsa (your favorite heat level)
- 8-10 (6-inch) corn or flour tortillas, quartered
- 2 cups (225g) shredded cheddar cheese (or Mexican blend)
Instructions:
- In a large skillet over medium-high heat, brown the ground beef. Drain off any excess grease.
- Stir in the chopped onion and taco seasoning to the cooked beef. Cook until the onion is softened, about 3-5 minutes.
- In the slow cooker, layer the ingredients in the following order: A thin layer of salsa, Tortilla pieces, Meat mixture, Black beans, Corn, Diced tomatoes and green chilies, Cheese. Repeat layers, ending with cheese on top.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the cheese is melted and the casserole is heated through.
- Let the casserole stand for 10 minutes before serving. Top with your favorite toppings and enjoy!
