Ingredients:

  • 1 pound (450g) ground beef (or ground turkey or chicken)
  • 1 large onion, chopped
  • 1 packet (1 ounce / 28g) taco seasoning
  • 1 (15 ounce / 425g) can black beans, rinsed and drained
  • 1 (15 ounce / 425g) can corn, drained
  • 1 (10 ounce / 280g) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (16 ounce / 450g) jar salsa (your favorite heat level)
  • 8-10 (6-inch) corn or flour tortillas, quartered
  • 2 cups (225g) shredded cheddar cheese (or Mexican blend)

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef. Drain off any excess grease.
  2. Stir in the chopped onion and taco seasoning to the cooked beef. Cook until the onion is softened, about 3-5 minutes.
  3. In the slow cooker, layer the ingredients in the following order: A thin layer of salsa, Tortilla pieces, Meat mixture, Black beans, Corn, Diced tomatoes and green chilies, Cheese. Repeat layers, ending with cheese on top.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the cheese is melted and the casserole is heated through.
  5. Let the casserole stand for 10 minutes before serving. Top with your favorite toppings and enjoy!
