Ingredients:
- 2 cups cherry tomatoes (about 300g)
- 1 tablespoon olive oil (15ml)
- Salt and pepper to taste
- 1 ripe avocado, peeled and pitted
- 1 cup crumbled feta cheese (about 150g)
- 2 tablespoons fresh lemon juice (30ml)
- 1 tablespoon fresh basil, chopped (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and halve the cherry tomatoes. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast in the preheated oven for 20-25 minutes or until soft and slightly caramelized.
- In a mixing bowl, add the peeled avocado and mash with a fork until smooth.
- Stir in crumbled feta cheese, lemon juice, and optional fresh basil into the mashed avocado.
- Once the tomatoes are roasted and cooled slightly, fold them gently into the avocado-feta mixture.
- Taste the dip and adjust seasoning with additional salt, pepper, or lemon juice as needed.
- Transfer the dip to a serving bowl and garnish with extra basil if desired. Serve immediately.
