Ingredients:

  • 2 cups cherry tomatoes (about 300g)
  • 1 tablespoon olive oil (15ml)
  • Salt and pepper to taste
  • 1 ripe avocado, peeled and pitted
  • 1 cup crumbled feta cheese (about 150g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 tablespoon fresh basil, chopped (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the cherry tomatoes. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast in the preheated oven for 20-25 minutes or until soft and slightly caramelized.
  4. In a mixing bowl, add the peeled avocado and mash with a fork until smooth.
  5. Stir in crumbled feta cheese, lemon juice, and optional fresh basil into the mashed avocado.
  6. Once the tomatoes are roasted and cooled slightly, fold them gently into the avocado-feta mixture.
  7. Taste the dip and adjust seasoning with additional salt, pepper, or lemon juice as needed.
  8. Transfer the dip to a serving bowl and garnish with extra basil if desired. Serve immediately.
