  • ½ cup granulated sugar (100g)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon (optional)
  • 1 ½ cups all-purpose flour (190g)
  • ½ cup chopped walnuts or pecans (optional, 70g)
  • ½ cup chocolate chips (optional, 90g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with papers or greasing it lightly.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Combine melted butter with mashed bananas, stirring until well mixed.
  5. Whisk in the sugar, beaten egg, and vanilla extract until combined.
  6. Sprinkle baking soda and salt over the mixture, then add ground cinnamon (if using).
  7. Fold in the all-purpose flour until just incorporated; avoid overmixing.
  8. Add any optional ingredients (nuts or chocolate chips) and gently combine.
  9. Spoon the batter evenly into prepared muffin cups, filling each about two-thirds full.
  10. Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  11. Cool in the tin for 5 minutes, then transfer muffins to a wire rack to cool completely.
