- ½ cup granulated sugar (100g)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon (optional)
- 1 ½ cups all-purpose flour (190g)
- ½ cup chopped walnuts or pecans (optional, 70g)
- ½ cup chocolate chips (optional, 90g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin by lining it with papers or greasing it lightly.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Combine melted butter with mashed bananas, stirring until well mixed.
- Whisk in the sugar, beaten egg, and vanilla extract until combined.
- Sprinkle baking soda and salt over the mixture, then add ground cinnamon (if using).
- Fold in the all-purpose flour until just incorporated; avoid overmixing.
- Add any optional ingredients (nuts or chocolate chips) and gently combine.
- Spoon the batter evenly into prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer muffins to a wire rack to cool completely.
