Ingredients:

  • 3 Tablespoons (24g) super-fine Almond Flour
  • 1/4 Teaspoon Baking Powder
  • Pinch (or 1/8 tsp) Salt
  • 1 Medium/Large Egg, lightly beaten
  • 1 Tablespoon Melted Butter or Coconut Oil

Instructions:

  1. Lightly grease the inside of a standard 10-12 oz ceramic mug with butter or oil to prevent sticking.
  2. In the mug, add the almond flour, baking powder, and salt. Use a fork to thoroughly mix the dry ingredients until homogenous.
  3. Pour the melted butter/oil and the lightly beaten egg into the dry mixture within the mug.
  4. Whisk everything vigorously directly in the mug until just combined. Ensure no pockets of dry flour remain at the bottom, but do not overmix.
  5. Place the mug into the microwave. Cook on High power for 90 seconds. If using a lower wattage microwave, start at 75 seconds and check progress.
  6. Check for doneness: the bread should look set and spongy on top. If it appears wet in the center, return it for another 15-second burst, watching carefully to avoid drying it out.
  7. Carefully remove the hot mug. Let it cool for about 30 seconds. Gently run a thin spatula or knife around the edges, then tip the mug upside down onto a small plate to release the slice.
  8. Slice horizontally for toastable halves and serve immediately with your preferred toppings.
