Ingredients:

  • 4 slices thick-cut bread (Brioche, Challah, or Texas Toast - approx. 100g)
  • 2 large eggs (100g)
  • 1/4 cup (60ml) milk (full-fat or semi-skimmed)
  • 1 tablespoon (15g) granulated sugar
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 1/4 teaspoon (1g) ground cinnamon
  • Pinch of salt
  • 1 tablespoon (15g) unsalted butter
  • Optional: Cooking spray

Instructions:

  1. Whisk together eggs, milk, sugar, vanilla, cinnamon, and salt in a shallow dish until well combined.
  2. Dunk each slice of bread in the custard mixture, soaking for about 15-20 seconds per side. Be careful not to over-soak; you want it moist, not soggy!
  3. Melt butter (and cooking spray, if using) in a non-stick pan over medium heat.
  4. Place soaked bread slices in the hot pan, being careful not to overcrowd.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. A slight jiggle is fine; that's the custard!
  6. Serve hot, with your favorite toppings.
