Ingredients:

  • 2 medium ripe avocados
  • Juice of 1 lime
  • 2 large eggs
  • 2 tablespoons water
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • Generous pinch of cayenne pepper
  • 1 1/4 cups panko bread crumbs
  • Additional salt and fresh cracked black pepper for sprinkling

Instructions:

  1. Halve, peel, and slice the avocados into long spears; drizzle with lime juice to prevent browning.
  2. In a small bowl, beat together the eggs and water. Set aside.
  3. In another small bowl, whisk together flour, salt, chili powder, and cayenne pepper.
  4. In a medium bowl, measure out panko crumbs along with additional salt and freshly cracked black pepper; mix well.
  5. Line a baking sheet with parchment paper.
  6. Dip each avocado slice in the flour mixture first, then in the egg mixture before coating it in panko crumbs.
  7. Heat oil in a medium heavy-bottomed saucepan to 375°F (190°C).
  8. Fry about six to eight coated avocado slices until golden brown (about 3–4 minutes). Remove from oil and sprinkle lightly with salt.
  9. Repeat frying process for remaining batches.
  10. Sprinkle fried avocado fries with cayenne pepper and lemon juice before serving.
  11. Queso Cheese Dip

    1. Combine cheeses and sprinkle with cornstarch.
    2. Transfer cheese mixture into a saucepan over low heat. Gradually add whole milk while stirring until smooth (approximately 10-15 minutes).
    3. Stir in diced green chiles along with their reserved juices.
