Ingredients:
- 2 medium ripe avocados
- Juice of 1 lime
- 2 large eggs
- 2 tablespoons water
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon chili powder
- Generous pinch of cayenne pepper
- 1 1/4 cups panko bread crumbs
- Additional salt and fresh cracked black pepper for sprinkling
Instructions:
- Halve, peel, and slice the avocados into long spears; drizzle with lime juice to prevent browning.
- In a small bowl, beat together the eggs and water. Set aside.
- In another small bowl, whisk together flour, salt, chili powder, and cayenne pepper.
- In a medium bowl, measure out panko crumbs along with additional salt and freshly cracked black pepper; mix well.
- Line a baking sheet with parchment paper.
- Dip each avocado slice in the flour mixture first, then in the egg mixture before coating it in panko crumbs.
- Heat oil in a medium heavy-bottomed saucepan to 375°F (190°C).
- Fry about six to eight coated avocado slices until golden brown (about 3–4 minutes). Remove from oil and sprinkle lightly with salt.
- Repeat frying process for remaining batches.
- Sprinkle fried avocado fries with cayenne pepper and lemon juice before serving.

Queso Cheese Dip
- Combine cheeses and sprinkle with cornstarch.
- Transfer cheese mixture into a saucepan over low heat. Gradually add whole milk while stirring until smooth (approximately 10-15 minutes).
- Stir in diced green chiles along with their reserved juices.
