Ingredients:

  • 1 cup (150g) fresh strawberries, hulled and halved
  • 1 cup (140g) fresh blueberries
  • 1 cup (150g) pineapple chunks, bite-sized
  • 1 cup (120g) mango chunks, bite-sized
  • 1 cup (150g) green grapes, seedless
  • 1/2 cup (90g) dark chocolate chips
  • 1 tbsp (15ml) coconut oil
  • 1 pinch (0.5g) sea salt

Instructions:

  1. Rinse all fruit thoroughly and pat completely dry with paper towels to ensure the chocolate adheres.
  2. Line a baking sheet with parchment paper and spread the fruit in a single layer, ensuring pieces do not touch.
  3. Place the tray in the freezer for 60 minutes until the fruit is firm to the touch.
  4. Combine dark chocolate chips and coconut oil in a microwave-safe glass bowl.
  5. Microwave in 20-second intervals, stirring between sessions, until glossy and smooth. Stir in the sea salt.
  6. Remove frozen fruit from the freezer and create a zig-zag pattern of chocolate over the fruit using a fork or piping bag.
  7. Return the tray to the freezer for 30–60 minutes until the chocolate shell is hardened.
