Ingredients:
- 1 cup (150g) fresh strawberries, hulled and halved
- 1 cup (140g) fresh blueberries
- 1 cup (150g) pineapple chunks, bite-sized
- 1 cup (120g) mango chunks, bite-sized
- 1 cup (150g) green grapes, seedless
- 1/2 cup (90g) dark chocolate chips
- 1 tbsp (15ml) coconut oil
- 1 pinch (0.5g) sea salt
Instructions:
- Rinse all fruit thoroughly and pat completely dry with paper towels to ensure the chocolate adheres.
- Line a baking sheet with parchment paper and spread the fruit in a single layer, ensuring pieces do not touch.
- Place the tray in the freezer for 60 minutes until the fruit is firm to the touch.
- Combine dark chocolate chips and coconut oil in a microwave-safe glass bowl.
- Microwave in 20-second intervals, stirring between sessions, until glossy and smooth. Stir in the sea salt.
- Remove frozen fruit from the freezer and create a zig-zag pattern of chocolate over the fruit using a fork or piping bag.
- Return the tray to the freezer for 30–60 minutes until the chocolate shell is hardened.
